Students cook with garden produce!
While during the summer months all of the produce from our school garden goes to our food pantry, during the school year we use as much as we can for our own students. Several times this year, students in Aftercare have joined Fr. Jeff in using our produce to make dishes for students and faculty alike. They have used our okra and green peppers to great effect, combining them with stewed tomatoes and garlic in a simple succotash. They have also made mounds of greens from our collards, combining them with kale, spinach and mustrds to give the whole school a small taste of these nutritious veggies

"Every week one of our middle school classes spends a class period learning about and working in our school garden. This fall they have been harvesting okra, collards, peppers and tomatoes, as well as putting in some fall crops: carrots, radishes and turnips."
